Healthiest Bean According To Studies

I love pinto beans, but recently found out that black beans are the healthiest bean there is according to studies done regarding things like highest level of antioxidants in any bean, great source of fiber and more vitamins compared to other beans. I found this out on nutritionfacts.org. In case you are curious, pinto beans came in 2nd for healthiest beans...both are considered to be good helpers in reducing bad cholesterol. Beans, if prepared and cooked properly, can be a very nutritious and satisfying "staple" food to a healthy diet. Bean Cooking Preparation Tip: soak beans in pure non tap water over night with a tablespoon or two of fresh squeezed lemon juice and drain before cooking for best results and maximum benefits from beans. This causes the enzyme "inhibitors" from getting in the way of good nutrient absorption. It also activates the good nutrient assisting enzymes for better digestion. For even better benefits from beans, soak them in pure plain water until they begin to sprout. You can then eat them as is or cook them as well. I like to use a pressure cooker to save time.
