Pumpkin Cookies
Dry Ingredients:
2 cups Bob's Red Mill Millet Flour
1/2 cup Soy Flour, Buckwheat Flour, or Amaranth Flour
3 tsp. Baking Powder
2 tsp. Cinnamon
1/2 tsp. Sea Salt
1/2 tsp. Nutmeg
1/4 tsp. Ginger
1-2 cups Raisins (optional)
1 cup chopped Nuts (optional)
Liquid Ingredients:
1/2 cup Canola Oil
1 1/4 cups Honey
2 Eggs, beaten
1 Tbsp. Molasses (optional)
1-2 tsp. Vanilla (optional)
1 1/2 cups cooked mashed pumpkin
Preheat oven to 400-425°. Stir dry ingredients into liquid ingredients. This makes a thick pourable batter. Bake medium-sized cookies for 12-14 minutes.
